Skinny Meatloaf Cupcakezz w/ Mash Potato Frosting

Yes you read that title right. I’ve made this recipe a few times and it never gets old! I love it. Got it from my favorite Skinny Taste website (which has yet to ever steer me wrong). You don’t HAVE to actually use the mashers as frosting but it is sort of fun.

Ingredients:

Meatloaf Cupcakes:

  • 1.3 lb 93% lean ground turkey
  • 1 cup grated zucchini, all moisture squeezed dry with paper towel (I actually just chopped up some celery and used it instead)
  • 2 tbsp onion, minced
  • 1/2 cup seasoned breadcrumbs
  • 1/4 cup ketchup
  • 1 egg
  • 1 tsp salt

Mash Potatoes:

  • 2 or 3 Yukon gold potatoes, peeled and cubed (I didn’t peel)
  • 2 large garlic cloves, peeled and chopped up
  • 2 tbsp fat free sour cream
  • 2 tbsp fat free chicken broth
  • 1 tbsp skim milk
  • 1/2 tbsp light butter
  • salt to taste
  • dash of fresh ground pepper
  • 2 tbsp chives (fresh or dry)

Step One:

Chop up your potatoes and garlic and put in a large pot with salt and enough water to cover; bring to a boil. Cover and reduce heat; simmer for 20 minutes or until potatoes are tender. Drain and return potatoes and garlic to pan.

Step Two:

Add 2 tbsp sour cream, 2 tbsp chicken broth, 1 tbsp skim milk and 1/2 tbsp of butter to potatoes. Using a masher or blender, mash until smooth. Season with salt and pepper to taste.

Step Three:

Preheat the oven to 350°. Line a muffin tin with foil liners if you have some. If not, then just spray the muffin tin. In a large bowl, mix the turkey, zucchini (or celery), onion, breadcrumbs, ketchup, egg, and salt. Looks yummmmy right? Trust me it will be.

Step Four:

Place meatloaf mixture into muffin tins filling them to the top, making sure they are flat at the top.

Step Five:

Bake uncovered for 18-20 minutes or until cooked through. Remove from tins and place onto a baking dish.

Step Six: (Optional)

Pipe the “frosting” onto the meatloaf cupcakes if you want and serve! I had some disposable pipe bags and tips so I went for it. Threw some dry chives on too.  And no I def did NOT do this to every single one ha! Just a few for fun. You could also just plop the potatoes on top, or plop them on the side, whatever you fancy. Aren’t they so cute??? Taste even better. They’d be great for a fun holiday party…mini appz or even a plethora for the main entree. You can practically make anything into “cupcakes” these days it seems….I love it.
